minutesThe walnut sauce is a typical sauce of Ligurian cuisine and is often used to combine with pasta, such as traditional “pansotti”.
Ingredients
80 g shelled walnuts
1 glove of garlic
100 ml milk
a pinch of salt
40 g white bread
50 g grated parmesan
50 g extra virgen olive oil
Method
- In a little bowl soak the white bread with milk for a few minutes until the milk is totally absorbed
- Then put all the ingredients in a blender: walnuts, soaked white bread with all the milk, a pinch of salt and parmesan cheese.
- Mix the ingredients for 10/15 seconds at medium speed.
- With a rubber spatula, gather the mixture and repeat mixing them for a few seconds more until it gets smooth and creamy
- If it results too thick, add a little bit of milk.
Your sauce is ready!!! - You can store it in a glass jar in the fridge for 4/5 days.

Just a little tip
- while you’re cooking pasta, remove an half cup of this hot water and add a little bit of it to the sauce to make it creamier. Season the pasta with this tasty and delicious sauce. You can topping the dish with some walnut kernel.
