minutesPesto sauce is a traditional condiment from Liguria region based on basil, pine nuts, Parmesan, Pecorino, garlic, oil and salt.
Ingredients
70 g basil
1 glove of garlic
30 g pine nuts
30 g pecorino cheese (grated)
80 g Parmesan cheese (grated)
120 g extra virgin olive oil
A pinch of salt
Method
- Wash and dry the basil leaves carefully.
Pay attention not to break them, otherwise the leaves will oxidize and the sauce will result dark. - Put the ingredients in a blender or a mixer: Basil, garlic,pine nuts, cheese and mix them for 10/15 seconds.
- With a silicone spatula , gather the mixure at the bottom.
Add the oil and salt and continue mixing them for a few seconds until the sauce gets smooth and creamy. - If it results too thick, add a little bit of oil.
And here it is!! Your pesto sauce is ready!! - You can store it in a glass jar (covered with a few tablespoons of oil) in the fridge for 4/5days.
You can also freeze it in single-portion tubs and use it whenever you want!
It’s perfect to combine with pasta.
What if i don’t find…
- If you don’t find pine nuts you can use other dried fruit like walnuts or macadamia nuts or hazelnuts or cashew nuts. If you don’t get pecorino cheese, you can use all the quantity of Parmesan cheese. Please, do not use other grated cheese. The result won’t be the same.
