This is a typical Italian and traditional Apulian dish, which reminds me Sunday time spent with my family!

Ingredients

  • For the meatballs
  • 500 g ground beef

  • 2 slices of white bread

  • ½ cup of milk

  • 1 egg

  • 1 teaspoon of salt

  • 1 cup of parmesan

  • 2 clove of garlic

  • 1 bunch of parsley

  • For the sauce
  • 1 carrot

  • 1 onion

  • 1 stick of celery

  • 1 teaspoon of sugar

  • sweet pepper

  • olive oil

  • oregano

  • basil

  • salt

  • 1 lt. of tomato sauce

Method

  • Soak the bread into the milk and squeeze it after a few minutes
  • Combine the ground beef with the egg, parmesan cheese, salt, pepper, minced garlic, parsley and the soaked bread.
  • Knead all the ingredients and shape the meatballs with the palm of your hands, the size of a walnut and put them on a plate.
  • Prepare the sauce
Chop the onion, the celery, the carrot and fry it with two tablespoons of olive oil.
  • Add the tomato sauce (not ketchup please!!), a pinch of salt, pepper and a teaspoon of sugar. Cook it until it boils.
  • Now, carefully add the meatballs and stir very softly from time to time.
  • Cook over low heat for about 30/40 min (stirring frequently)
Finally add basil leaves and a pinch of oregano
Be careful!! The souce should be quite thick, not liquid.

A typical dish from Apulia is “orecchiette con le polpette al sugo“!!

You may cook this special pasta and then add the sauce with meatballs that you have just prepared.

If you can’t find this you can use any other type of short pasta.

Soon I will show you how to prapare the “orecchiette” homemade!!! 💪💪
